This small elegant box containing Pistoles Paris.

 

Sulpice Debauve, pharmacist to King Louis XVI and Queen Marie-Antoinette, arrived early one morning in June 1779 to the Chateau de Saint-Cloud, Pavillon de Valois in the building reserved to, "Service de Bouche du Roi". On a marble slab of the room called "du cafe", from almond milk and cocoa prepared the day before, he created what will become "Les Pistoles de la Reine".

This day is an important day in the history of chocolate because it denotes the "birth" of eating chocolate in its solidified form. This brilliant idea opened the way to the making of garnitures, ganaches and pralines, and give reason for the Debauve and Gallais motto: "Utile Dulci" (Horace).
